That is an easy and quick recipe! I’ve learnt this recipe during my stay in Warragul, Australia in 2015.

Ingredients

  • 2 clove of garlic smashed
  • 1 big onion chopped
  • 1 big green capscum chopped
  • 2 big carrots chopped
  • 1/2 purple cabbage chopped
  • 2 tablespoon of olive oil
  • 4 medium potatos (or sweet potatoes) without skin and chopped
  • 1 serving of cauliflower cutted in small trees
  • 1 serving of broccoli in cutted in small trees
  • 10 okra chopped
  • Salt and pepper
  • 300g of tomato souce
  • 100ml of water

Directions

First step in put in a pan the olive oil, the garlic and onion to cook until golden brown, put the campiscum chopped and let it cook for 3 minutes. Then you will gently add the vegetables one by one mixing it with the garlic and onion. The broccoli and cauliflower must be the last vegetables. Let it cook for about 10 minutes.

After they cook a bit you will add the tomato sauce and mix everything and let it cook until get a bit soft but not so soft, the ideal point is when the veggies are crispy. If necessary add the 100ml of water. Let it cook for more 15 minutes. Turn off the stove and put sal and pepper as you like! Serve with white rice cooked. And bon appetit!
