That is a very easy recipe and perfect to surprise someone you like!

Ingredients

  • 6 Plantain cut in medium pieces
  • 2 tomatoes chopped
  • 1 onion chopped
  • 1 capiscum chopped
  • 20g coriander chopped
  • 200ml coconut milk
  • 25ml of Oil palm
  • 2 lemon juice
  • 250ml water
  • Salt to taste

Directions

In a pan cook the tomatoes, onion, capiscum with water, coconut juice and oil palm for 10 minutes. The add the plantain and let it cook for more 5 minutes. Turn off the stove and then add the lemon juice and the  coriander and adjust the salt.

Serve it with rice and farofa.
